AuthorAbout 25 years ago, a beautiful couple, Chris and Ray, shared a peasant loaf recipe with me from their kitchen, because they heard I wanted to learn to bake my own. That peasant loaf recipe is fail proof! Amazing bread, every time that my daughter and I enjoyed sharing over the years with a little honey butter. LASAGNA was a first recipe I made on my own as a teenager that my family RAVED about! lol All I had done was follow the recipe on the pasta box! But their love and support of me for blessing our table with that first "figuring it out" lasagna, gave me the confidence to KEEP baking lasagnas and adding my own flare! I remember my Dad (I have been blessed to have TWO of them), wanting more spinach in his! And, I remember hiding the blackbeans in ground beef to make it a more health conscious offering for my family and waiting to see if anyone noticed!!! THEY DID NOT, but my son is hip to my sneaky healthy ways, by now! LOL! Fast forward from bread and lasagna, I have ALWAYS wanted to learn how to bake sourdough bread, but the recipes with the scales and grams and temperatures and live starter that couldn't be bought at the store were so elusive!!!!! A new precious neighbor of ours gifted us an amazing sourdough she had made and very GRACIOUSLY offered to TEACH ME!!!! My first live starter did not live. And, she gave me another one that I have been able to keep alive for some time now! I actually have a variety of starters, now! A honey starter. A French starter. And, I am creating a new chocolate-coffee starter. There is a passion and peace about *this* bread, that it must rise to be right...that it takes careFULL handling to succeed, and that it is healthy for consumption,...much more so than commercially purchased or store bought breads. Even bakery purchased sourdough can have "gums" and preservatives added. My bread is just flour and water with whatever inclusions. The simplicity and cleanness is a healthy lifestyle eating PLUS. Additionally, it has been documented some who cannot tolerate bread, fare much better for gut health and lower glycemic index benefits, enjoying true sourdough bread, the way I, and other at home bakers, make them.
